To reimagine a 1604 convent, hotelier Valéry Grégo assembled a veritable dream team: Studio Mumbai and Studio Mediterranee for the architecture, Festen for the interiors, and Tom Stuart-Smith for the gardens. Limewashed floors and stone walls now frame a warren of 21st-century pleasures, from the Roman-style baths to the elegant yet restrained accommodations to the Saturday farmers market. From $420 per night.

Designed by Jean-Michel Gathy of Denniston, the inaugural Aman offshoot builds on the brand’s reputation for warm minimalism with richly layered interiors—each room a tone poem of natural materials, neutral colors, and tactile fabrics. The concept (distinguished by its lower price point) previews additional Janu projects now in the works from Montenegro to Saudi Arabia. From $684 per night.

Bernardaud porcelain, Pierre Frey fabrics, period woodwork—it’s only the crème de la crème at this sprawling estate, built by Cistercian monks in the 12th century and later rescued from disrepair by Baroness Charlotte de Rothschild. Designer Cordelia de Castellane (of Dior Maison fame) oversaw the latest refurbishment, leaving no charming country-house detail unconsidered. From $300 per night.

Le Grand Mazarin: Vincent Leroux.

Tapped by boutique hoteliers Maisons Pariente, AD100 veteran Martin Brudnizki trained his gaze on three 14th-century buildings in the heart of the Marais, enlivening the interiors with vernal hues, daring silhouettes, and decorative savoir faire. The indoor pool, cocooned in frescos by Jacques Merle, is reason enough to make the trip. From $525 per night.

@ John Athimaritis

Built by architect William Young in 1906, this Edwardian Baroque landmark—originally Britain’s War Office—has been reborn as the Singaporean hotel group’s first UK location. The building alone is a masterpiece, with mosaic halls, ornamental ironwork, and exquisite masonry (all restored under EPR Architects). So too is the refresh, a historically sensitive tour de force by the late, great Thierry Despont. From $1,385 per night.

Just nine suites in total, this remote camp offers an ingenious means to sleep beneath the stars thanks to its system of retractable roofs.
